Ma l\u2019analisi chimico-fisica fatta in laboratorio non \u00e8 tutto, perch\u00e9, al di l\u00e0 dell\u2019acidit\u00e0, \u00e8 con l\u2019esame organolettico che si riesce sia a misurare l\u2019intensit\u00e0 delle caratteristiche positive dell\u2019olio sia a individuare l\u2019eventuale presenza di difetti.<\/p>\n<p>Ecco le regole per eseguire questo esame alla perfezione anche senza essere degli esperti. Inoltre ti occorre un cucchiaino, un quaderno e una penna per appuntare le sensazioni.<\/p>\n<p>Oltre ovviamente ad una o pi\u00f9 bottiglie di olio da assaporare ed esaminare: mai pi\u00f9 di quattro volta, per\u00f2, ricordando, fra un assaggio e l\u2019altro, di \u201cpulire\u201d la bocca mangiando una fettina di mela o bevendo un po\u2019 d\u2019acqua, preferibilmente frizzante ed a temperatura ambiente!<\/p>\n<p>[\/et_pb_text][\/et_pb_column][et_pb_column type=&#8221;2_5&#8243; custom_margin=&#8221;-30px|||&#8221;]<\/p>\n<p>Versa due cucchiaini di olio nel bicchiere (circa 15 ml) e coprilo subito con la mano per evitare che le note aromatiche del prodotto si disperdano subito nell\u2019aria.<\/p>\n<p>Con l\u2019altra mano fa roteare lentamente e delicatamente il bicchiere per far riscaldare l\u2019olio e farne emergere tutti i profumi e sentori, tenendolo inclinato per favorire il distaccamento delle componenti volatili: avr\u00e0 raggiunto la temperatura ideale di 28\u00b0 quando non sentirai pi\u00f9 differenza di temperatura tra mani e bicchierino.<\/p>\n<p>[\/et_pb_text][\/et_pb_column][\/et_pb_row][\/et_pb_section][et_pb_section fb_built=&#8221;1&#8243; Questo esame non deve durare pi\u00f9 di 30 secondi, tempo oltre al quale il nostro organismo non \u00e8 pi\u00f9 in grado di percepire gli aromi.<\/p>\n<p>Per cogliere a pieno tutte le note, ripeti l\u2019operazione un paio di volte: ti trovi di fronte a un buon olio quando l\u2019odore rimanda al<span>\u00a0<\/span><strong>frutto<\/strong><span>\u00a0<\/span>da cui proviene \u2013 l<strong>\u2019oliva<span>\u00a0<\/span><\/strong>\u2013 con<span>\u00a0<\/span><strong>profumi freschi<\/strong>,<span>\u00a0<\/span><strong>netti<\/strong><span>\u00a0<\/span>e<span>\u00a0<\/span><strong>piacevoli.<span>\u00a0<\/span><\/strong>Sempre al naso sar\u00e0 possibile cogliere anche tutta una serie di<span>\u00a0<\/span><strong>note aromatiche<\/strong><span>\u00a0<\/span>di tipo erbaceo, vegetale e floreale (erba, erbe aromatiche, fiori, pomodoro, carciofo, mela, banana, frutti di bosco, mandorla, pepe e molto, molto altro ancora\u2026), magari con note piccanti leggere alla fine. Al contrario, un prodotto di scarsa qualit\u00e0 lascia un sapore fastidioso o nullo.<\/p>\n<p>Devi percepire gli stimoli tattili come consistenza e fluidit\u00e0. Ma non solo. Anche le sensazioni scatenate dal gusto hanno il loro peso. Senti un sapore dolce, amaro o piccante? Bene, vuol dire che stai assaggiando un olio extravergine di oliva degno di questo nome.<\/p>\n<p>Concludi questa fase dopo 20\/30 secondi espellendo fuori l\u2019olio (o anche ingerendolo), godendoti i sentori che persistono in bocca. Ci sono oli fruttati leggeri, medi e intensi.<\/li>\n<li><strong>Amaro<\/strong>: le note amare devono essere sempre in equilibrio con la piccantezza, senza mai prevaricare.<\/li>\n<li><strong>Piccantezza<\/strong>: l\u2019olio non deve mai recare fastidio alla gola e deve lasciare una bocca pulita a fine degustazione.<\/li>\n<li><strong>Corpo<\/strong>: il grado di consistenza del liquido nella bocca. Un olio di qualit\u00e0 non \u00e8 spigoloso, ma offre sensazioni retro-olfattive piacevoli al palato.<\/li>\n<\/ul>\n<p>A seconda delle caratteristiche del prodotto puoi poi procedere a trovare il<span>\u00a0<\/span><strong>giusto abbinamento alimentare<\/strong>, tenendo presente una massima: i cibi delicati vanno accostati a oli delicati, mentre le pietanze saporite vanno condite con oli fruttati medi o intensi.<\/p>\n<p>Ecco qualche esempio:<\/p>\n<ul>\n<li>oli con note amare si sposano bene con piatti forti tipo rag\u00f9, cicoria, carne rossa alla brace;<\/li>\n<li>oli piccanti danno un tocco di vivacit\u00e0 a zuppe di legumi, bruschette, sughi al pomodoro;<\/li>\n<li>oli dolci arricchiscono portate delicate a base di pesce e carni bianche. Assaggiali sui crostacei, salmone e pesce spada alla griglia;<\/li>\n<li>oli con sentori vegetali: rinfrescano pietanze come l\u2019insalata di pomodori, la caprese o zuppa di cereali.<\/li>\n<\/ul>\n<p>Ogni olio extravergine di oliva esprime tutta la propria forza a crudo.<\/p>\n<p><strong>I difetti dell\u2019olio e.v.o.<\/strong><\/p>\n<p>La degustazione pu\u00f2 non sempre essere piacevole e l\u2019esame dell\u2019olio extravergine di oliva potrebbe anche far riscontrare dei difetti, i cui principali sono:<\/p>\n<ul>\n<li><strong>avvinato<\/strong>: ricorda i toni dell\u2019aceto o del vino, perch\u00e9 probabilmente le olive non sono state molite entro le 24 ore ed hanno sub\u00ecto una parziale fermentazione prima della frangitura;<\/li>\n<li><strong>muffa \u2013 umidit\u00e0:<span>\u00a0<\/span><\/strong>sulle olive si sono sviluppati abbondanti funghi e lieviti per essere rimasti ammassati per molti giorni e in ambienti umidi<\/li>\n<li><strong>riscaldo<\/strong>: ha un profumo che richiama l\u2019olio vecchio e ha il sapore di riscaldato, a causa della cattiva conservazione delle olive che sono state ammassate senza cura, iniziando a fermentare;<\/li>\n<li><strong>morchia<\/strong>: l\u2019olio \u00e8 stato filtrato bene e sul fondo si depositano residui che trasmettono cattivi odori;<\/li>\n<li><strong>rancido<\/strong>: il difetto pi\u00f9 sgradevole, che colpisce i prodotti che sono stati oggetto di un processo ossidativo stando all\u2019aria, alla luce e al calore per troppo tempo;<\/li>\n<li><strong>metallico<\/strong>: il flavour ha un sapore metallico a causa degli strumenti metallici con cui le olive vengono a contatto durante la lavorazione;<\/li>\n<li><strong>terroso<\/strong>: sa di terra perch\u00e9 i frutti non sono stati lavati bene nel momento in cui sono stati raccolti;<\/li>\n<li><strong>fieno \u2013 legno:<span>\u00a0<\/span><\/strong>oli provenienti da olive secche;<\/li>\n<li><strong>legno umido:<\/strong><span>\u00a0<\/span>flavor caratteristico dell\u2019olio estratto da olive che hanno subito una gelata sull\u2019albero;<\/li>\n<li><strong>cetriolo:<\/strong><span>\u00a0<\/span>flavor caratteristico dell\u2019olio olio conservato ermeticamente per troppo tempo;<\/li>\n<li><strong>salamoia<\/strong>: tipico dell\u2019olio ottenuto da olive conservate in salamoia;<\/li>\n<li><strong>verme<\/strong>: olio ricavato da olive colpite da larve di mosca dell\u2019olivo;<\/li>\n<li><strong>cotto<\/strong>: olio sottoposto ad alte temperature durante la produzione.<\/li>\n<li><strong>acqua di vegetazione<\/strong>: flavor avvertito a causa del contatto prolungato con le acque di vegetazione che hanno intrapreso un processo di fermentazione;<\/li>\n<li><strong>grossolano<\/strong>: lascia una sensazione di sporco in gola.<\/li>\n<\/ul>\n<p><strong>Cosa annotare sul quaderno?<\/strong><\/p>\n<p>All\u2019inizio potr\u00e0 bastare anche un semplicissimo \u201c<strong>mi piace<\/strong>\u201d\u00a0o \u201c<strong>non mi piace<\/strong>\u201d ma, subito dopo, iniziate a riportare brevi annotazioni come: \u201c\u00e8 amaro, ma gradevole\u201d, \u201c\u00e8 troppo piccante rispetto all\u2019amaro\u201d, \u201c\u00e8 pulito e non impasta la bocca\u201d, \u201cci trovo delle note di erba appena tagliata\u201d, \u201cho sentito la mela, o la<span>\u00a0<\/span><em>mandorla, o il carciofo\u2026\u201d<\/em><span>\u00a0<\/span>e cos\u00ec via, fino ad acquisire sempre pi\u00f9 esperienza e capacit\u00e0 di percepire, di<span>\u00a0<\/span><strong>sentire<\/strong>, cosa \u00e8 capace di offrirci un olio extravergine di oliva di qualit\u00e0.<\/p>\n<p>[\/et_pb_text][\/et_pb_column][\/et_pb_row][\/et_pb_section][et_pb_section fb_built=&#8221;1&#8243;
